So, i was looking through my cookbook and came across a recipe that i hadn't made in a while that came from my late uncle Clifford and i remember it growing up b/c my mom would sometimes make it and it is sooo good:)
It's a southern/Cajun dish that is served over rice.
Here's the recipe.
1stick butter
1tsp. minced garlic
2 T. flour
1-2 bunches of green onion
1 onion
2 sticks celery (no more than 2)
1 green bell pepper
2 cans mushroom soup ( i used the campbells golden mushroom)
1 can water
1 jar jalapeno cheese whiz (i could only find the original, and that worked fine. if you want more spice, put in a jalapeno)
3lbs. crab, crawfish, shrimp ( crawfish was expensive, so i just used some canned real crab, salad shrimp (they are smaller and already detailed) frozen imitation crab, and scallops) if you want the crawfish and they are good, they look like shrimp and need to be cracked and the meat taken out. Sometimes the grocer will sell just the meat, but it's expensive. But a good taste.
Melt the butter and cut up all veggies and cook till tender then add in all other ingredients and still till heated through.
*** IMPORTANT- let it sit in the fridge overnight and serve over rice the next day. It's so much better the second day when the spices have mixed together.
don't go off pictures alone. This dish is very good and combines the seafood and cheese to make a delicious taste. Serve over rice.
